| Description |
English: 'Mbika' (pumpkin or squash seed flour porridge) combined with 'mbinzo' (caterpillars) is a very popular and nutritious central Africa recipe that includes familiar ingredients such as fresh onions, tomatoes, capsicum, green onions, garlic and parsley plus a flour made from ground edible seeds (grain de courges moulu) from in-season Cucurbitaceae (watermelons, pumpkins.gourds, squashes). In this case, a plate of dried Imbrasia truncata from the Kinshasa market was used. Shown served with accompaniments popular 'chikwangue' (rolled cassava 'bread' cooked in leaves) and cooked plaintains. Congo. |
