English: Using a mortar and pestle to mash and moisten the seed flour with fresh ingredients for the ground seed porridge before sending to the cook pot. 'Mbika' (grain de courges moulu),(pumpkin or squash seed flour porridge) combined with 'Mbinzo' (caterpillars) is a very popular central Africa recipe that includes familiar ingredients such as fresh onions, tomatoes, capsicum, green onions, garlic and parsley plus a flour made from ground edible seeds from in-season Cucurbitaceae (watermelons, pumpkins.gourds, squashes). Any of several varieties of edible caterpillars can be used, depending on the season. Congo. |
