Description
中文(繁體):位於高雄市苓雅區大仁公寓市場內的製麵店,至少已有三代了,是到大仁公寓市場買菜者經常會光顧的老麵店。

麵條製作流程共分為五部分。 一、攪拌,精選台灣優質麵粉廠的麵粉,每次投入6或10包,定量注水設備,讓麵粉和鹽水的比例維持一定。 二、複合壓延,複合壓延對麵條的口感至關重要,要讓麵粉和鹽水的比例維持一定。 三、成形,是指將麵皮切分成麵條。 四、烘乾,成形後的麵條含水量高,需要烘乾,才能保持常溫保。 五、包裝,麵條的包裝分為內包裝與外包裝。

由於這幾天毫雨來襲,否則就能看到製成的麵條像瀑布般批掛在太陽下的壯觀場面。
